Well, I am using KMPlayer to take the screencaps (it allows you to set the exact frame rates at which it takes caps, so it makes for smooth gifs) and PhotoScape to make the gifs (it allows you to work in batches and offers a variety of tools to edit the caps). Both are freeware programs and easy to use. For the throw-and-catch set, though, I additionally used Photoshop to adjust coloring, brightness and sharpness because I wanted it to look particularly crisp and colourful.
